If you’re looking for the quickest/easiest way to make a veggie side, roasted broccolini is your best friend. It tastes great a little under cooked, or a tiny bit burned… so you can’t really go wrong. Plus broccolini is naturally a little sweet which makes it inherently more delicious than other vegetables.
2 bunches of broccolini, washed with the tips of the stems removed
1 tablespoon olive oil
a big pinch of salt
1/4th teaspoon red pepper flakes
1/4th of a lemon
Preheat your oven to 400 degrees
Throw down your broccolini on a baking sheet covered in tin foil (you know, so you don’t have to clean the pan)
Sprinkle salt, red pepper flakes and olive oil over the broccolini and toss to coat
Roast in the oven for about 20 minutes until the tips are slightly darkened but the stems are still bright green
Squeeze lemon over the broccolini just before serving!
