Caramelized Onion Greek Yogurt Dip

When I dip, you dip, we dip.

INGREDIENTS:

  • 1/4 cup olive oil

  • 1 yellow onion, finely chopped

  • 1 teaspoon salt

  • pepper (to taste)

  • 1/4 teaspoon sugar

  • 1/2 teaspoon dried chives (fresh works too!)

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon dill powder

  • 1 cup full-fat plain Greek yogurt

LET’S COOK:

  1. In a medium-sized pot heat the olive oil over a medium heat

  2. Once the olive oil is warm add in all the onion with the salt and sugar

  3. Stir regularly for the first 10 minutes to make sure the onions don't burn

  4. After 10 minutes turn the heat down to low and let them caramelize slowly over the low heat for 30 minutes, stirring frequently

  5. Once the onions are well caramelized (meaning each side is a beautiful medium brown color) turn off the heat

  6. Transfer the onions into a mixing bowl and let it sit for 10 minutes to cool

  7. Add in the rest of the ingredients and stir well to combine

  8. Add any extra salt, powders, or pepper to taste

  9. Enjoy chilled!
