Roasted Broccolini

If you’re looking for the quickest/easiest way to make a veggie side, roasted broccolini is your best friend. It tastes great a little undercooked or a tiny bit burned… so you can’t really go wrong. Plus broccolini is naturally a little sweet, which makes it inherently more delicious than other vegetables.


INGREDIENTS:

  • 2 bunches of broccolini, washed with the tips of the stems removed

  • a big pinch of salt

  • ¼ teaspoon red pepper flakes

  • 1 tablespoon olive oil

  • quarter of a lemon

LET’S COOK:

  1. Preheat your oven to 400°F. Throw down your broccolini on a foil-lined baking sheet (you know, so you don’t have to clean the pan). Sprinkle salt, red pepper flakes, and olive oil over the broccolini, and toss to coat.

  2. Roast in the oven for about 20 minutes, until the tips are slightly darkened, but the stems are still bright green.

  3. Squeeze lemon over the broccolini just before serving!
